As most school nurses know, food allergies can be potentially fatal. The symptoms may be mild (rashes, hives, itching, swelling, etc.) or severe (trouble breathing, wheezing, loss of consciousness, etc.). Creating a safe environment for students with food allergies requires collaboration between the school nurse, parents, the child and other school staff.
